Hello, my name is Ardelis Popoca, 26 yrs old born in LA. I’m a Culinary Arts Degree Graduate, Proud Wife, and Mother of two wonderful kids. When I was a little girl, I loved watching my grandma cook and bake, I knew then I wanted to be like her.  My  Passion is Baking and Cooking. I bake cakes for a living special occasions to custom made. I love to cook for my family and friends, happy hearts after a good meal is a great accomplishment for me. I try to keep food traditional, but i also like to invent my own creations and make them better or healthier. Hope you enjoy the recipes just as much as we enjoy them at home.

Chiles en Nogada
(Traditional from Puebla, MX.)chiles en nogada

Ingredients:

5 Chiles Pasillas
2lbs Ground Beef
1 cup Pine Nuts
1 cup Raisins
3 Bay leaves
salt and pepper to taste

Sauce:

3 can Media Crema
1 can evaporated milk
1cup walnuts

Garnish:

Pomegranate seeds

How to Make:

Roast and Peel Chile pasillas. In a sauce pan brown the ground beef adding pine nuts, raisins, and bay leaves. Add salt and pepper to taste. Stuff chiles with meat mixture leaving bay leaves out. place stuffed chiles in an oven pan. In a blender add Media crema, evaporated milk, and walnuts and blend till walnuts nicely blend then pour sauce over stuffed chiles. place in 350F oven for 15 minutes. then plate and garnish with pomegranate seeds. Enjoy!

 

Spinach Lemonade

Ingredients:

8 Cups of cleaned and rinsed Spinach
6 Cups of Cold Water
8 Cups of squeezed Lemon Juice (sweet)
1 Cup sugar or to taste

How to make:

In a blender add the spinach and cold water and blend until smooth. in  a Punch Bowl strain spinach water, add lemon juice, water, and sugar until right consistency for your palette. Enjoy!

 

Fresh Mixed Green Salad:

Ingredients:

1 Package of Mixed Greens
16oz Feta Cheese
1package blueberries
16oz chopped walnuts
1cup extra virgin Olive oil
1cup of lemon juice
pepper to taste

How to make:

In a big bowl ad mixed greens, blueberries and walnuts. Squeeze lemons in a bowl and whisk olive oil as you pour when emulsified together and it doesn’t separate ad some salt and pepper whisk some more then pour over bowl with mixed green mix and add feta cheese and serve as a side or with some yummy grilled chicken. Enjoy!

Turkey Burgers

Ingredients:

(Makes 8 Patties)
2lbs Ground Turkey
16oz shredded Sharp Cheddar
1 Diced red onion
1oz Worcestershire Sauce
salt and pepper to taste
1 diced red bell pepper
1 diced green bell pepper

How to make:

In a Bowl put all ingredients and mix well. when mixed and ready, form mixture into a 1inch patty, and lay over a tray w/ parchment or wax paper. when all formed put in fridge to cool before grilling. * You can use wheat bread or substitute the turkey for beef.

 

Caldo de Pescado

Ingredients

2 0r 3 Whole Catfish Clean and cut in 5 pieces
2 Potatoes peeled and cut in squares
3 Carrots peeled and sliced
Epazote
10 Chiles Guajillos
5 Chiles Puya
4 whole peppers
3 garlic Cloves
salt to taste.

How to make:

In a Pot Boil Chiles Guajillo and Puya. In a blender add Garlic, whole pepper, and boiled chiles w/ some of the water and blend. In a big pot boil water and add potatoes,carrots, and epazote. In 10 minutes add sliced Cat Fish and strain blended mixture into pot add salt to taste boil then serve. Serve w/ lemon, tortillas, and sliced Avocado. Enjoy!

 

Blackened Salmon

Ingredients:

1 tablespoon Italian seasoning
1 teaspoon cracked black pepper
2 tablespoons paprika
2 tablespoons salt
1 1/2 tablespoons cayenne pepper
2 tablespoons butter
1 tablespoon oil, for frying
4 (6-ounce) portions skinless and boneless salmon fillets

How to make:

Preheat oven at 400 def F.
In a small bowl, combine the Italian seasoning, black pepper, paprika, salt, and cayenne. Season each piece of fish with the rub.
Heat a large skillet over medium-high heat and add the butter and oil. Once the butter has melted, add the fish and cook about 2 minutes per side.
Transfer the whole pan to the oven and cook for another 4 to 6 minutes.

  2. where can I buy pomegrante seeds?

    • You can find them at Trader Joe’s, Food for Less, NorthGate in the fruit section. they sell them in packages or the actual fruit for you to peel. You should be able to find them now since its the season, after January they are hard to find
